It is hard to believe I have been gone a month. I thought that leaving Lakeside would be easier once we had a site in the Campground, but I was wrong. We have more friends, stronger friendships and it is more difficult to say goodbye.
From the day I arrive home, my Lakeside lists begin with new ideas for the gardens, decorating our deck, entertaining and doing things we never had time for in other years.
My memories of Lakeside sustain me through the winter. Lakeside is more than a place; it gives me a reason to smile and a feeling of well being. It is unexplainable until you have experienced it yourself. So for me, the countdown to when I can return begins the moment after I leave.
As I ponder my Lakeside memories, I have made a comfort soup I would like to share with you for a winter night or an easy meal on cold days during the Lakeside season.
Beth & Lana’s Italian Soup
1 Chopped Onion
1/3 Broken Spaghetti
1 Sliced Carrot `
4 cups Chicken Broth
2 Ribs Celery, cut
½ tsp Oregano
1 lb Sausage browned
28 oz. Tomatoes
2 Medium Zucchini, sliced
Salt to Taste
Place onion, carrots, celery, sausage, zucchini, chicken broth, oregano, salt and tomatoes in a large crock pot.
Cook on low for 7-8 hours. During the last hour, add the spaghetti.
When soup is ready to serve, it will be thick. Serve with Parmesan cheese.
